Looking for a New Healthy & Fast Breakfast

Everyone loves this recipe and let’s face it; freshly made muffins in the morning are amazing!  How

What is my secret to making fresh muffins in the busy morning?  I make 2 batches of this recipe and use Pyrex containers to freeze the batter in individual servings! All you have to do is take the container out the day before, place in the fridge and by morning it is thawed and ready to be baked. 18 minutes later everyone thinks your amazing!


4 cups all-purpose flour

4 teaspoons baking soda

4 teaspoons ground cinnamon

1 teaspoon salt

2 ½ cups packed brown sugar

4 medium apples, peeled, cored and chopped

2 ½ cups finely shredded carrots

2 cups raisins

1 16oz can crushed pineapple (undrained)

1 1/3 cups cooking oil

6 eggs

1 teaspoon vanilla


In a large bowl (I use a foil catering dish) combine the dry ingredients. Add the fruit & veggies. In a separate bowl combine all the wet ingredients. Add wet ingredients to dry and mix until moist.

Bake at 375 F for 18 minutes or until toothpick comes out clean.
